These buns are so easy to make and will definitely spice up any breakfast platter!

Ingredients

Buns
  • 2 sheets puff pastry – use GF if necessary
  • 1/2 cup pecans
  • 1/2 cup light or dark brown sugar we used dark brown
  • 4 tbsp granulated sugar
  • ¾ tsp salt
  • tbsp cinnamon
  • 3 tbsp vegan butter melted
Icing
  • 3/4 cup icing sugar
  • ¾ tbsp plant milk
  • 1 tsp vanilla extract or paste

Instructions

Buns

  • Preheat the oven to 180ºC (fan)/350ºF/Gas Mark 4.
  • Place the pecans on a baking tray and toast them until they are golden, between 5-10 minutes. Check them after 5 minutes as they can burn quite quickly. When cool, cut them into small pieces. Set aside.
  • In a large bowl, mix the sugar, salt and cinnamon.
  • On a floured surface, unfold the first puff pastry sheet and lay it with the long edge facing you.
  • Brush half of the melted butter over the entire sheet. Evenly sprinkle half the cinnamon/sugar/salt mix over the entire sheet.
  • Roll the pastry up, away from you, into a sausage shape and lay it seal side down on the worktop.
  • Cut off both ends (around an inch either side) and then cut the roll into 9 even pieces.
  • Place the rolls on a lined baking tray (with good spacing in between each one), swirl side up, and set aside until you’ve repeated the process with the second sheet.
  • Once you’ve repeated the process with the second puff pastry sheet and filling, place the two baking trays into the oven and bake for around 17-20 minutes or until golden.

Icing

  • Mix all the ingredients together and add a little more plant milk, bit by bit, if necessary. You want the icing to be thick (ish) but pourable at the same time.

Assembly

  • Arrange the warm cinnamon buns on a tray, drizzle over the icing and top with the toasted pecans immediately after.

It’s Shrove Tuesday, aka Pancake Day, and as avid pancake lovers, we’re beyond excited!

Pancake Day is all about devouring a plate of plant-based fluffy cloud-like pancakes over breakfast, lunch, or dinner, totally guilt-free! 

Now you’re probably aware that most traditional pancake recipes use eggs as a staple ingredient, but fear not, it’s pretty easy to veganize pancakes with just a tiny tweak – enter aquafaba!

Why take eggs off the menu this pancake day?

According to OGGS, the UK gets through an estimated 55.6 million eggs every Pancake Day, generating a whopping 14,281 tonnes of CO2e straight into the atmosphere.

To put it into perspective, that’s the carbon dioxide equivalent of driving 1,124 cars around the world.

The production of eggs, like other intensive farming practices, generates an enormous amount of greenhouse emissions, and the industry is riddled with shocking practices that include culling, confinement, unnatural environments, and physical abuse.

Research carried out by Sapio Research found that three-quarters (76 percent) of us have little, or no idea about the environmental impact of eating eggs, despite it being widely known how bad the dairy and meat industry is for our planet. 

Pancake pledge

To help encourage the nation to make a sustainable swap this Pancake Day, OGGS has launched the Pancake Pledge, which involves taking eggs off the menu and using OGGS Aquafaba as a replacement instead.

Ingredients

  • · 4 cups rolled oats
  • · 1 tsp salt
  • · 3 tbsp flaxseed meal
  • · 1/3 cup almond slivers chopped or substitute chopped unsalted almonds
  • · 1/3 cup coconut oil melted
  • · 2/3 cup pure maple syrup
  • · 1 tsp vanilla
  • · 1 tbsp fresh lemon juice
  • · zest of one lemon

Instructions

  • o Preheat the oven to 350º.
  • o Lightly grease a large baking sheet with coconut oil or line the baking sheet with parchment paper or a silicon baking mat.
  • o Combine the ingredients in a large bowl and mix until thoroughly combined. The mixture will be quite wet.
  • o Spread the mixture evenly on to a baking sheet. Bake for 10 minutes on the middle rack, then gently stir the granola. Bake for an additional 10 minutes. The granola should be golden brown. Remove the granola from the oven and allow it to cool completely before stirring it. The granola will continue to crisp as it cools.
  • o Store the granola in an airtight container.

Instructions

Savory “Beef” & Mushroom Avocado Toast

  • Cook the “Beef” according to its package instructions, seasoning with a dash of sea salt and cracked black pepper. Then, set aside.
  • Toast the sourdough until slightly golden brown. Then layer with sliced avocado.
  • Slice the mushrooms, the saute in avocado oil (or EVOO). Do not salt just yet. You want to get the mushrooms nice and crispy first. Wait until the mushrooms are fully cooked to add any seasoning.
  • Top the avocado with mushrooms and ground beef. Garnish with fresh basil and more cracked black pepper.

Lemon Pepper Chick’n Avocado Toast

  • Cook the Chick’n according to its package instructions, then season generously with lemon pepper. Set aside.
  • Toast the sourdough until slightly golden. Then spread a layer of your favorite hummus on top.
  • Layer the sliced avocado, then spoon the Chick’n onto the toast and garnish with microgreens and a drizzle of avocado oil. Enjoy!

“Chorizo” & “Egg” Avocado Toast

  • Cook the “Chorizo” according to its package instructions and set aside.
  • Cut a 1” slice of multigrain bread and toast it until it’s golden brown.
  • Cook your plant-based egg, adding your favorite seasonings. We love a dusting of sea salt and a dash of cayenne.
  • Now it’s time to assemble. Layer the egg onto the toast, top with sliced avocado and chorizo. Garnish with microgreens. Option to top with a final drizzle of avocado oil.

Ingredients

  • 1 cup Ragi flour/finger millet flour
  • 1/2 cup Oat flour
  • 1/4 cup sooji/semolina
  • 1 tsp ginger green chilli paste
  • 2 tsp vegan yogurt
  • 1 tsp oil
  • 2 tsp soaked chana daal
  • Salt to taste
  • 1 tsp cumin powder
  • 1 tsp ajwain/carom seeds
  • 1 cup water or more as needed
  • 1 tsp Eno/fruit salt
  • 2 tsp lemon juice
  • 1 tsp sesame seeds to sprinkle on top

Instructions

  • Grease the plates. Have your steamer/cooker ready with water boiling.
  • Mix everything except Eno & lemon juice.
  • Make a smooth batter. When water is ready, add Eno & lemon juice to the batter. Mix well.
  • Divide the batter between prepared plates. Top with sesame seeds & red chili powder (optional). Steam for10-12 mins until knife comes clean.
  • Prepare tadka using mustard seeds, curry leaves, green chillies, cilantro and 2 tbsp water. Pour it over dhoklas.
  • Enjoy with green chutney!

  • 1 tsp black salt (kala namak)
  • 1/2 tsp turmeric
"Egg" White
  • 1/4 cup soy milk or other plant milk
  • 1/4 cup rice flour
  • 1/4 cup soy yogurt (or other plant yogurt)
  • 1 tsp black salt (kala namak)
Topping
  • THIS Isn't Bacon Rashers
  • 1 cup spinach
  • wedge lemon

Instructions

Pancakes

  • Combine dry ingredients in a large bowl and combine wet ingredients in a separate bowl
  • Pour wet mixture into dry mixture bowl, whisk until smooth and rest batter for 5 minutes
  • Pour 1/2 cup of batter onto a non-stick pan over medium heat. When the top starts to bubble, flip until it turns slightly golden in places. Repeat with rest of batter.

The "Eggs"

  • Boil peeled sweet potato chunks in a pan until completely soft, drain, mash into a pulp and stir in rest of egg yolk ingredients
  • Add all egg white ingredients into a bowl and whisk.
  • Heat some oil in a frying pan to medium/high, fry 2 tbsp of egg white mixture for 30 seconds to 1 minute. Add 1 tbsp of egg yolk mixture to the middle of egg white, cover with lid for 2 mins. Repeat with the rest of the mixture.

Toppings and Serve

  • Heat 1 tbsp oil in a frying pan, fry THIS isn’t Bacon rashers for 2 minutes each side
  • Wilt the spinach in a small saucepan with 2 tbsp water
  • Layer the pancakes on top of each other, top with spinach, the egg, THIS Isn’t Bacon and drizzle with lemon
