53-year-old John Griffin recently took on the ‘climbing Everest at home‘ challenge to raise money for food bank charity Trussell Trust.
Griffin, from Shoreham, England, scaled 41,000 steps in his own house over four-days – and ended up finishing the challenge 90 minutes ahead of his target.
‘I was amazed’
In an interview with Plant Based News, Griffin, who has been a ‘committed vegan’ for more than two years, said: “Whilst I am generally fit, I haven’t exercised much in the last six months.
“I was amazed that not only was I able to achieve seven hours a day of continuous stair climbing, but I actually got faster each day over the four-day challenge.
“I was planning to launch a Vegan Buddha box delivery service in May and over the last six months, I having been eating a rich diet of salads and pulses each day, researching delicious and nutritious combinations for our boxes.
“I believe that my vegan diet gave me the stamina to continue and the fact that I got faster each day show my body was repairing itself rapidly.”
Due to requests to learn about his diet, Griffin has decided to launch a YouTube channel on April 10 featuring his ‘favorite Power Plant and Buddha Box recipes’.
