This stir-fry is super easy with a creamy, rich and flavorful sauce. You'll be coming back for seconds!

Ingredients

Stir-Fry
  • 250 g Stir-fry veg or buy separate veg (eg pak choi, baby sweet corn, mange tout, broccoli, fresh chilli)
  • 250-300 g udon or soba noodles we used Yutaka, cooked according to the packet (if you want a quicker option, use straight-to-wok noodles)
  • 250 g firm tofu cut into small cubes, or use pre-marinated tofu chunks
Satay Sauce
  • tbsp toasted sesame oil use rapeseed as an alternative
  • ½ clove garlic roughly chopped
  • tbsp soya sauce use tamari for GF option
  • tbsp sweet chilli sauce
  • 125 g smooth peanut butter
  • Juice of 1 lime
  • 150 ml water

Instructions

Satay Sauce

  • Blend all ingredients until smooth. Do not heat up yet, set aside.

Stir-Fry

  • Drain then pat dry the tofu with kitchen roll or a clean tea towel. Fry in a little oil until golden, turning frequently. Add 1 tablespoon soya sauce, stir through then set aside.
  • In a large wok, fry the vegetables (also add straight-to-wok noodles at this stage if you’re making the quick version) on a med-high heat for a few minutes.
  • Cook the noodles according to the packet.
  • Heat up the satay sauce, adding a little more water if necessary as the sauce thickens as it heats.
  • Divide the noodles into 4 bowls then add a layer of stir fried veg, tofu and then satay sauce.

Almost a quarter of global consumers are cutting down their meat intake, according to a new report.

And, 67 percent said they believed their choices and actions can make a difference in the world.

Global consumers cut down on meat

The research was provided by global market research company Euromonitor International in its Voice of the Consumer: Health and Nutrition Survey 2021. The company claims to be the ‘world’s leading provider of business intelligence.

In the report, 23 percent of those surveyed reported that the main driver of reducing meat intake is because they wanted to have a healthier lifestyle.

Among the people across the globe who believed their actions can impact the world, Japanese consumers were ranked the lowest – with 25 percent agreeing.

Changing attitudes

But while the company says attitudes on sustainability in Japan are ‘low’, it is confident younger generations will help boost it. This is because they are ‘more aware’ of global and environmental issues.

Senior analyst Nozomi Hariya said: “The COVID-19 pandemic made consumers more aware of the impact their individual actions have on society.

“An example of this are flexitarians, who reduce their consumption of animal products, and driving growth of plant-based alternatives.”

Moreover, affordability is ‘critical’ in drawing more consumers, Hariya added.

Supermarket giant Sainsbury’s has issued a product recall after its products in its own ‘vegan’ labeled range were found to contain meat and dairy.

In an online release, it was revealed a Love Your Veg ready meal did in fact contain milk, pork, and beef.

Sainsbury’s product recall

The product in question is the Love Your Veg Butternut Squash & Lentil Lasagna. As a result of the recall, all customers with packs containing the use-by date of July 17 are urged to avoid eating it.

Moreover, they can return it to their nearest Sainsbury’s store for a full refund.

It was caused by a ‘packaging error’, Sainsbury’s claimed. Moreover, the issue is now under investigation.

‘No other Sainsbury’s products have been affected by this issue. We would like to apologize for the inconvenience this may cause’, the company said.

Vegan label

The Food Standards Agency issued an allergy alert as the mix-up poses a health risk to anyone allergic to milk and milk constituents.

According to the organization, the product was incorrectly packed with Sainsbury’s Bolognese Melt.

Another huge food brand, Itsu, had to issue a product recall in recent months.

It came after its popular vegan Gyoza Vegetable Fusion Packs contained a host of animal products.

They included crustaceans, fish, mollusks, and eggs.

Nearly 400 restaurants in North America began plating up Beyond Meat’s new vegan chicken tenders today.

The breaded tenders – made out of peas and faba beans – offer 14 grams of protein per serving. They contain no GMOs and 40 percent less saturated fat than the leading foodservice chicken tenders.

Food chains like Next Level Burger, Fire Wings, Dog Haus, Epic Burger, and Sarpino’s Pizzeria will be among those to offer the vegan chicken. Beyond Meat said it will be able to lower the price as the product becomes more widely available.

Dariush Ajami, Chief Innovation Officer at Beyond Meat, said the company is ‘innovating’ the crowded poultry market. In the US, poultry is eaten more than any other meat.

He said: “We’re innovating the poultry market with the new Beyond Chicken Tenders—the result of our tireless pursuit for excellence and growth at Beyond Meat.

“As with all our products, Beyond Chicken Tenders offer delicious taste and an exceptional culinary experience, along with strong nutritional benefits. Innovation is at the heart of Beyond Meat, and Beyond Chicken Tenders are the latest example of our mission to create groundbreaking, tasty options that are better for people and for our planet.”

Vegan Beyond Meat

Beyond Meat first caught the world’s attention in 2016 when it launched the Beyond Burger. The patty, made from pea protein, was designed to look, cook, and taste like animal-based meat.

Now the company also offers plant-based meatballs, classic and spicy breakfast sausages, ground beef, and beef crumbles. It also produces Hot Italian, Sweet Italian, and Brat Original sausages.

In June, Forbes reported that Beyond Meat’s total revenue may exceed $1 billion by 2023.

Japanese food tech Next Meats has successfully developed a vegan egg. The company says its plant-based option is better for the environment than animal-derived eggs.

Called Next Egg 1.0, the product will join Next Meats’ existing vegan range, which includes chicken and burgers as well as yakiniku and gyudon meat.

Next Egg 1.0 will launch through Japan’s B2B channels, whereby businesses will be able to purchase the it directly. Then it will become available to consumers in Japan and eventually offered in other countries, too.

The launch is especially significant given that Japan is the second-largest consumer of eggs worldwide, after Mexico.

Ryo Shirai is the CEO of Next Meats. Shirai says the company hopes its plant-based egg will raise awareness of the ‘issues that surround egg production‘.

In a press release, the company explained that ‘the environmental and ethical problems of the production process are not widely known by consumers in [Japan]’.

Environmental impact of eggs

According to the 2021 book Environmental Impact of Agro-Food Industry and Food Consumption, more than 70 million tonnes of eggs are produced every year.

Sustainability-focused website Green Eatz collected data from the Environmental Working Group’s Meat Eater’s Guide as well as the EPA’s Guide to Passenger Vehicle Emissions. It found that meat, cheese, and eggs have the highest carbon footprints compared to other foods.

The production of one kilo of eggs generates 4.83 kilograms of CO2 equivalent – the same as driving 11 miles.

Meanwhile, plant-based foods like nuts, tofu, and lentils produce 2.3, 2.0, and 0.9 kilograms of CO2 respectively.

Egg production can also contaminate water and soil.

Egg facilities generally produce more manure than the surrounding land can absorb. The manure contains nitrogen and phosphorous. When it enters groundwater or surface water supplies, it can contaminate drinking water and harm marine life.

Further, local communities living near to a chicken facility can develop respiratory problems. Hen houses often use industrial fans to blow air pollutants like ammonia, as well as fecal matter, out of the facility.

Aquaculture startup Wildtype will soon open the world’s first lab-grown sushi bar in its pilot plant in San Francisco, California.

The company’s cruelty-free seafood will become accessible to the public in the next two to three months.

Wildtype cultivates real salmon and other fish from cells in a lab. The process results in a product that is biologically identical to fish, including in its taste, texture, and nutrients.

But scientists are able to leave out common contaminants like mercury and microplastics. Moreover, Wildtype makes its lab-grown fish without harming or interfering with marine life.

‘The status quo needs to change’

Wildtype’s pilot plant became operational last month. The startup predicts that the plant will be able to produce more than 200,000 pounds of seafood per year.

Aryé Elfenbein is the Co-Founder of Wildtype. He said to Business Wire: “Global demand for seafood is outpacing supply, so the status quo needs to change. Our pilot plant will showcase the promise and wonder of growing fish fillets using cell cultivation.”

“In addition to being designed to shorten innovation cycles and facilitate the scaling of food production, the facility will be a place where the public can learn about this fascinating new technology.”

The facility will house an education center that will screen documentaries and host tours with science classes from local schools.

It’s part of Wildtype’s goal to establish ‘trust and transparency’ between consumer and company. “We want to show people where their food comes from and how it’s made,” said Wildtype Co-Founder Justin Kolbeck to Business Wire.

Canada Goose announced today that it will phase out coyote fur trims on its jackets. The Canadian winter clothing manufacturer has faced backlash due to animal cruelty concerns.

The luxury brand will stop buying fur by the end of this year. It will stop manufacturing its fur products before the end of 2022.

“Our future is fur free,” the company said. “We believe that what we do matters, and how we do it is just as important.”

Cruelty in the fur industry

Coyotes are caught in the wild with spring-loaded traps, according to PETA, before being killed and skinned.

Rebecca Aldworth is the Executive Director of Humane Society International/Canada. She said: “Fur trapping results in prolonged animal suffering, amputation and death for target and non-target wild and companion animals.”

“Notably, the traps used throughout North America are banned in many other countries for animal welfare reasons.”

Is Canada Goose vegan?

Whilst Canada Goose has committed to ditching fur, its products will not be animal-free. Its jackets still feature down and wool.

Vegan dairy cheese start-up Change Foods just closed an oversubscribed Seed round of $2.1 million. The one-year-old company has now raised $3.1 million USD in funding.

A myriad of investors backed the plant-based food brand. Investors include Better Bite Ventures, Canaccord Genuity, Clear Current Capital, Plug and Play Ventures, and the lead of Google AI Jeff Dean, among others.

GERBER-RAUTH, which also bought into Change Foods, is a private investment company. It focuses on projects related to food and beverage, including animal-derived dairy. A spokesperson for GERBER-RAUTH said: “We realize that the dairy ecosystem cannot and will not thrive if it remains static.”

They added that Change Foods will be among the ‘key players to revolutionize’ the dairy industry.

Vegan Cheese

The funding will be used to further develop Change Foods’ first product, dubbed animal-free cheese. The plant-based dairy option will be launched in the U.S. in 2023.

“People love cheese,” said CMO Irina Gerry in a statement sent to PBN. “Cheese is usually the last product holding consumers back from adopting a fully plant-based lifestyle, yet, cheese is second only to red meat (beef and lamb) in its carbon footprint.”

Change Foods Founder and CEO David Bucca added: “This is why we set out to make cheese without compromise. “

Change Foods uses microbial technology to create real dairy proteins, fats and flavors through precision fermentation. The company uses traditional cheesemaking techniques to produce a product that stretches and melts like dairy cheese.

Change Foods assembled its team online during the pandemic without ever having met. Bucca described the process as ‘surreal’. He added: “We are a part of a well-connected global community, able to attract investors, partners and suppliers from every corner of the world.”

Vegan meat brand Meatless Farm will soon launch a crowdfunding campaign that allows its customers to invest in the brand. The company hopes the £5m program will ‘accelerate the plant-based revolution’.

The investments, which start at £10, will be used to evolve the company’s entire supply chain. For example, by opening new plant protein facilities to produce higher quality ingredients and hiring top food development chefs and nutritionists.

Meatless Farm will also use the financial backing to add pizza toppings, chicken and meatballs to its line.

The British brand currently offers mince, burgers, sausages, hot dogs, sausage rolls and sausage patties. Its products are gluten-free and made with pea protein and non-GMO, sustainably sourced soy.

Is Meatless Farm good for the planet?

Meatless Farm maintains that its plant-based products are ‘a lot better for the environment’. For instance, the brand’s vegan mince generates 94 percent fewer greenhouse gasses than beef mince.

Morten Toft Bech is Meatless Farm’s Founder. “We are reaching a tipping point,” he said to The Guardian.

“We could reduce around 8 percent of the UK’s total emissions if we all ate just one less meat meal per week.”

He added that it is ‘people power which will create a full-blown revolution in food culture’.

Vegan animal advocate and actor Evanna Lynch has teamed up with a charity in a ‘first of its kind’ lawsuit to end lab experiments on owls at John Hopkins University (JHU) in Baltimore, US.

The Harry Potter star is launching the lawsuit with PETA.

Animal testing lawsuit

According to PETA, the owls face invasive surgeries and are forced into cramped plastic containers.

In addition to Lynch, the team includes the former Maryland secretary of health, as well as a current JHU student.

Writing on her Instagram account, Lynch said: “We know these killings should be illegal – it’s in the Constitution.”

Saving owls

‘The goal of this litigation is to have the Helms Amendment abolished so that the federal government can do its job under the Animal Welfare Act (AWA). Currently, the amendment functions as a death sentence for tens of millions of animals every single year’, PETA claims.

The organization says it has already spent years trying to rescue the owls. Last year, it released photographs exposing what the owls are subjected to, which were obtained by the U.S. Department of Agriculture.

PETA neuroscientist and postdoctoral JHU fellow Dr. Katherine Roe said: “Cutting open barn owls’ heads won’t help humans with ADD [Attention Deficit Hyperactivity Disorder].

“PETA is calling on Johns Hopkins to stop pouring money into cruel experiments that contribute nothing to treatments for humans.”

In a newsletter released last year, JHU claims it conducts the experiments ‘to better understand how the human brain works’.

Evanna Lynch

Lynch is the brains behind The Chickpeeps podcast – which renewed for a third season last year. She has long spoken out against animal cruelty and shared her views on veganism with her 3.6 million Instagram followers.

Additionally, she is the founder of Kinder Beauty Box, which is a vegan and cruelty-free beauty product subscription service.

‘I need you all to help us make a difference for owls’, she added on Instagram.

John Hopkins University has been approached for comment.
