Luxury hotel Four Seasons in Doha, Qatar, has just launched its latest plant-based menu, “Folia.”

The menu is a collaboration between vegan restaurateur Matthew Kenney and KBW Ventures, a mission-driven investment firm founded by environmentalist Prince Khaled bin Alwaleed of Saudi Arabia.

Focusing on ‘innovative’ culinary concepts

The multi-course menu is available at the hotel’s Après Spa Café and is said to focus on innovative creations inspired by a range of global culinary concepts – with an added Qatari touch. 

The menu boasts a selection of appetizers and entrées, including green papaya salad made with basil, cilantro, and spinach leaves, and topped with cashew dressing; and truffle pizza with Tuscan kale, wild mushrooms, cashew truffle cream, and lemon vinaigrette.

Chef Kenney has also crafted a selection of vegan desserts for the hotel, offering a combination of treats made from orange, chocolate, coconuts, banana, and cocoa.

“My mission has always been to empower, inspire and influence others to cultivate a healthy and conscious way of life through plant-based cuisine,” explained Kenney.

Increased plant-based offerings in time for the World Cup

The menu has launched ahead of the 2022 FIFA World Cup, which will take place in Qatar later this year. As one of the five host cities, Doha is expected to attract a large number of tourists from across the world.

In a recent press release, Prince Khaled said, “It is fitting that Folia, crafted to appeal to palates that have eaten the finest in healthy cuisine, is being presented at Four Seasons Hotel Doha now that Qatar is preparing to welcome the world for one of the biggest sporting events in history.”

He continued, “I look forward to seeing the Qatari plant-based dining scene elevated with Chef Kenney’s inspired dishes.”

Claridge’s, a five-star hotel situated in London’s luxury Mayfair has lost top chef Daniel Humm due to disagreements over his vision for a plant-based menu.

The fine-dining restaurant Davies and Brook is situated inside Claridge’s. And despite moving in a vegan direction, the hotel revealed it is going its ‘separate ways’ from the chef.

The Swiss chef is also the owner of the Michelin-starred Eleven Madison Park in New York City. Here, he transformed the entire menu vegan and reportedly had similar plans for Claridge’s.

Hotel loses chef over plant-based menu

The hotel posted a statement via Twitter over the weekend.

It read: “We wish to thank Daniel Humm and his extraordinary team at Davies and Brook for what they have created here at Claridge’s since they opened in 2019, gaining accolades along the way under challenging circumstances.

Humm made his own statement on Instagram

“We completely respect and understand the culinary direction of a fully plant-based menu that Daniel has decided to embrace and champion and now wants to introduce in London. 

“However, this is not the path we wish to follow here at Claridge’s at the moment.”

It is “regretfully” parting ways with the chef, the statement added. Moreover, management “wish him nothing but continued success”.

London hotel under fire 

Humm will continue to work for the restaurant until the end of December 2021.

In a separate statement, he announced that his future is “plant-based.”

“This is our mission and what we stand by as a company, and at this time this is not the direction that Claridge’s feels is right for them,” he added.

But news of his departure has sent criticism in Claridge’s direction on social media upon making the announcement. 

For example, fellow chef Neil Rankin dubbed it ‘shortsighted’. 

He told his Twitter followers: “You had the chance to do something truly groundbreaking in the safest hands possible which would have inspired millions but instead you cemented yourself in the wrong side of history.”

“You can tell your grandkids you cared more about animal flesh than their future,” another user added.

Investor and environmentalist Prince Khaled is teaming up with the internationally renowned chef and plant-based restauranter, Matthew Kenney to bring plant-based dining to Kuwait.

Now, a host of dedicated plant-based dishes are on offer at the luxury Four Seasons Hotel Kuwait.

The co-developed launch is called Folia, meaning ‘from the leaves’ in Latin. Both Matthew Kenney, HRH Prince Khaled bin Alwaleed bin Talal are behind the launch, in conjunction with Prince Khaled’s venture capital investment company KBW Ventures.

Last month, the Four Seasons Hotel Kuwait became the latest partner of Folia, developed exclusively for the resorts.

Its mission is to offer vibrant flavors and presentation to the plate using entirely plant-based ingredients from starters, mains, to desserts.

Among the dishes is Chef Kenney’s Eggplant Caponata, including raisins, pine nuts, and capers. And, a Cauliflower Pizzaola featuring charred cauliflower, roasted chickpeas, and vine-fresh tomatoes. 

Success prompts Folia expansion

Four Seasons Hotel Kuwait general manager Didier Jardin said he was excited to welcome the launch.

In a statement sent to PBN, he added: “It sends such a positive signal to our much-valued diners.

“We have the privileged position of operating restaurants in a part of the world where our clientele is sophisticated and very aware of new trends in the dining industry. 

“So, it gives me great pride knowing that we are evolving our product to meet changing needs of our much-valued guests.”

Folia’s latest Kuwait expansion comes after roaring success in Los Angeles, Dubai, and Bahrain.

And the hotel is set to offer a host of interactive events alongside it – with a view to engaging the city and its dining community.

Prince Khaled bin Alwaleed went vegan in 2009. And, said KBW Ventures is ‘thrilled’ to see Folia welcomed by the Four Seasons Hotel Kuwait.

“Folia allows guests to choose the highest quality options in mindful dining out. We’re looking forward to seeing the social media activity from people in Kuwait City experiencing flavourful and hearty plant-based cuisine created by Chef Kenney.”

It’s a cookery and art space formed in the US and now available across the world.

Working with the team in Kuwait is ‘a dream come true’, he added.

A new vegan hotel says it’s ‘pioneering the way for vegan tourism in Costa Rica‘. 

Mother Earth Vegan Hotel describes itself as the first-ever 100 percent plant-based boutique hotel in the beach town of Tamarindo.

The family-run establishment features 14 guest rooms and a culinary plant-based restaurant. It also has rooftop yoga, a healing studio and a natural saltwater pool.

Moreover, each guest room is designed to ‘reflect a sense of nature’ and features a bespoke energy painting created by the owner’s son Ambrosius Udael.

Vegan boutique hotel

Everything at Mother Earth Vegan Hotel is vegan-friendly including the wine served at its bar and restaurant, as well as cleaning products and amenities. 

It is also powered by solar energy and has committed to a zero-waste pledge in its restaurant Off The Grid. Moreover, it has a water conservation system that recycles grey water into clean water for irrigation. 

‘The vegan community is growing’

In a statement sent to PBN, the family said: “The vegan community is growing and with it the need for a hospitality experience that caters to them. 

“Costa Rica is a predominantly meat-centric country and as vegans we struggled. With such an abundance of fresh ingredients at our doorstep… We were driven to create a plant-based destination for like-minded travellers visiting this beautiful country.”

Vegan hotel award

Last year, the UK’s first-ever vegan hotel scooped a prestigious award.

Moreover, Saorsa 1875, located in Scotland, won National Geographic’s ‘GOOD EGG’ award. It was also listed as one of the top 48 new hotels in the world.

Speaking to PBN about the hotel’s 2019 launch, co-founder Jack McLaren-Stewart said: “We want to show people that veganism isn’t just a compassionate, ethical choice, it’s also an exciting, vibrant way of life.

“The innovation that we’ve seen across food and fashion in recent years has been hugely inspiring and we’re excited to be part of the world’s fastest-growing social justice movement.”

The world’s first-ever space hotel is facing calls to go vegan

Orbital Assembly Corporation (OAC), a large-scale space construction company, aims to build The Voyager Class space station in 2026.

Space hotel

The hotel – which will hold up to 280 guests and 112 crew members – is slated to open in 2027. It will feature facilities such as a restaurant, bar, and gym, as well as an impressive view of Earth. 

The Voyager Class will simulate moon-like levels of gravity and will slowly spin round to prevent guests from flying away. 

It is currently taking reservations but is reported to cost a staggering $5 million for a three-day stay. However, OAC hopes to reduce its cost over time. According to reports, it will eventually reach price parity with ‘a trip on a cruise or a trip to Disneyland’.

Would you visit a hotel in space?

‘A delicious five-star vegan menu’

Although its menu has not been confirmed, reports say ‘freeze-dried ice cream will be a staple dish’ at the hotel.

However, animal-rights charity PETA wrote a letter to CEO and president of OAC John Blincow – requesting The Voyager Class serve exclusively vegan food.

Ingrid Newkirk is the President of PETA. In an online statement, she said: “As the meat, egg, and dairy industries are killing billions of animals a year and devastating the environment, interest in vegan eating is skyrocketing.

“PETA urges Orbital Assembly to comet to dishing up a delicious five-star vegan menu that’s sure to land well with guests.”

Saorsa 1875, which describes itself as the U.K’s ‘first’ ever vegan hotel, has scooped a prestigious award.

The establishment, located in Pitlochry, Scotland, won National Geographic’s ‘GOOD EGG’ award – and was listed as one of the top 48 new hotels in the world.

‘Everything here is vegan’

“Founded by mother-and-son duo Sandra and Jack McLaren-Stewart, [the hotel] goes far beyond just sustainable, plant-focused grub: everything here is vegan, from the booze in the hotel bar to the cleaning products and upcycled furniture in the lounge,” National geographic said.

“Naturally, the heating comes from 100 percent renewable energy. Meanwhile, in the kitchen, Australian chef Deborah Fleck conjures up five-course dining extravaganzas using produce sourced locally or from the hotel’s gardens, with a tree planted for every dinner served.”

‘A vibrant way of life’

A vegan hotel is set to open in Greece this Summer – the country’s first.

The Koukoumi Boutique Hotel, in Ano Mera Mykonos, aims to appeal to both vegans and non-vegans looking for a healthy stay while traveling.

Suites

The hotel, whose name means ‘a snuggling place, protected from the wind’ in Myconian dialect, has 14 suites available for guests.

The suites are decked out in natural materials – all are sustainable and eco-friendly – including solar water heaters and coco-mat vegan mattresses.

In addition, there is an onsite gym, as well as a spa offering a variety of face and body treatments, massages, and a sauna. All products used are vegan, cruelty-free, and are housed in recyclable packaging. 

Vegan food

The menu has been designed by vegan chef Angeliki Charami, and features Greek-inspired flavors. Dishes include fresh pasta, salads, soups, and vegan burgers, as well as fresh baked good.

The hotel says of its menu: “A vegan diet is natural, cruelty-free and complete. It is a sensible choice for a healthy lifestyle. Fruit, vegetables, legumes, grains, seeds, and nuts presented in balanced combinations contain all the necessary nutritious elements that cater for the needs of every person from every culture or religion.

“Our exclusively vegan restaurant with our delicious recipes will challenge you to reconsider everything you believed about food before.”

The Best Western Opéra Liège in Paris has ditched all single-use plastic in exchange for eco-friendly alternatives.

The move is said to save more than 24,000 plastic bottles, 55,000 cosmetic packages, and 16,000 plastic bags every year.

‘A zero-waste ecosystem’

Working with Racing For The Oceans – who ‘strive to connect a zero waste ecosystem to the activity sectors it works with’ – the hotel’s 50 rooms and suites will no longer feature any single-use plastic from the end of February.

Guests will be given wooden key cards to access rooms, and amenities such as laundry bags and slippers will be made from bamboo.

All snacks in the mini bar will be plastic-free, and water bottles will be replaced with a water fountain and refillable glass bottles.

Shampoo, conditioner, and shower gel will be provided in the form of a three-in-one solid bar, while bamboo toothbrushes will be provided along with toothpaste in a lozenge form.

Guests can also make use of the Nespresso machines installed in the room which use biodegradable paper coffee capsules.

‘Zero-waste suppliers’

Speaking to Business Traveller, Co-Founder of Racing For The Oceans Marine Pescot said: “We are definitely looking to work with other hotels and to develop a bigger portfolio of zero-waste suppliers…

“Our objective is to work with bigger groups and advise them on what suppliers they can work with.”

Luxury hotel The Cavendish, in London’s Mayfair, is to launch a plant-based menu next month in celebration of Veganuary: the world’s biggest month-long pledge to go vegan. 

The four-star hotel will offer guests three vegan dishes per course at its 2AA Rosette Petrichor Restaurant. 

Dukkha Tofu Salad, Beetroot Cannelloni, Spiced Smoked Aubergine, and Coconut Panna Cotta are some of the meatless dishes available – as well as a selection of vegan wines. 

‘Simple food philosophy’ 

In a statement sent to Vegan Food & Living, Nitin Pawar, Head Chef at The Cavendish London, said: “I have a simple food philosophy: to create contemporary seasonal dishes using fresh and sustainable produce, locally grown where possible.

“I like to take inspiration from food and cultural trends, so with the rise of veganism in recent years, I am delighted to be able to launch a menu completely free of animal products. We created the Veganuary menu to offer everyone an opportunity to enjoy a plant-based fine dining experience.”

A 100 percent vegan hotel is set to open in Scotland in June.

Saorsa 1875, in Pitlochry, was created by vegans, who have made sure everything associated with it is animal-free, including bedding, toiletries, cleaning products used by staff, and even the electricity with comes from Vegan Society-certified Ecotricity.

The kitchen is led by Italian chef Luca Sordi who will use ingredients either sourced from the hotel’s vegetable patch or independent local suppliers. In addition, the hotel will collaborate with top vegan chefs from around the UK to create one-off dining experiences.

‘Veganism is exciting’

“We want to show people that veganism isn’t just a compassionate, ethical choice, it’s also an exciting, vibrant way of life,” Co-founder and Head of Lifestyle, Jack McLaren-Stewart, said in a statement sent to Plant Based News.
